*1kg beef ( cut into small thin cubes)
*1 raw papaya, ground to a paste for marinating the beef
*3 tbsp freshcream
*2 tbsp ginger-garlic paste
*1 tbsp red chilli powder
*2tbsp green chili paste
*1 tsp crushed roasted cumin
*1 tsp all spice powder
*1 cup yogurt
*Salt to taste
*Oil for deep-frying
*Wooden skewers as required
Marinatebeef with raw papaya, ginger-garlic,green chili paste,red chilli ,crushed roasted cumin,all spice powder and take our in a bowl and add egg, cream, and yogurt to the minced meat. For at least 10 hoursFix the meat on the skewers and barbecue it, till golden.Or heat oil in a pan and fry the minced meat until light brown.Malai seekh tikka kebab are ready, serve hot with chutney Malai Seekh Tikka .It is famous dishes to eid ul adha.
*1 kg kaleji
*3 tsps red chilli
*1 tsp roasted white cumin seeds powdered
*2 tbsp garlic ginger paste
*2 green chillies chopped
*oil as required
*chopped Coriander leaves (Hara Dhania) ,for garnish
*Salt to taste
Heat oil in a wok on medium flame and add kaleji.Then add garlic and ginger paste,red chilli powder,cumin powder and chopped green chillies,salt and stir.and garnish Coriander leaves (Hara Dhania) and kaleji is ready and Serve with prata.This is a special recipes of Eid al adha.

*1 tsp garam masala powder
*1/2 cup yogurt

Marinate kaleji with green chilies , coriander leaves. Salt, ginger garlic paste, chili powder, cumin powder,yogurt and garam masala powder and oil for a few hours. Put on skewers and cook over open flame.now it is ready to hot sever with puri or paratha .

*1kg goat/lamb meat with bones
*1tsp ginger-garlic paste
*salt to test
*blackpaper powder to test
IN a wok add meat,ginger-garlic pasteand stir-fry for 2 minutesadd water, coverAnd let it cook until the meat get fully cooked and the water dries out stir frequentlyandthen add blackpaper powder cook until the oil appear on the top and the meat fully cooks. it is ready to hot serve .
* Brain (Siri) 1
* Onions 2
* Ginger-Garlic paste 4 tsp
* Salt to test
*Chili (grounded) 2 tsp
* Coriander seeds (crushed) 2 tsp
*Turmeric 1/2 tsp
*garam masala powder 1tsp
1.First thoroughly wash the siri.
2. Then boil turmeric and salt.
3. Drain out and keep siri aside.
4. Heat oil in a pan and fry onions till golden brown.
5. Add in siri and fry well.
6. Add ginger-garlic paste and fry.
7. Add salt too.
8. Now add in coriander powder, red chilies, curd and fry.
9. Keep frying until oil starts to separate and float.
10. Add enough water to cook meat.
11. When the meat is tender add in garammasala.
12. Cook till gravy thickens.
13. Garnish with lemon quarters , greenchillies, chop ginger coarsely in long pieces and corianderleaf.
14. Serve hot with paye and naan.
